Makes approximately 4 servings
Ingredients
❏ 4 oz maifun brown rice noodles (we like the Annie Chun's brand)
❏ 4 medium carrots, chopped into small cubes
❏ 1 medium head of broccoli, chopped into small pieces
❏ 1 baby bok choy, chopped into small pieces
❏ 3/4 cup snap peas, chopped in thirds
❏ 3/4 cup green cabbage, chopped thin
❏ 1/2 cup raw cashews
❏ 3 tbsp soy sauce
❏ 1 tbsp teriyaki sauce
❏ 1 tbsp maple syrup
❏ 1/2 tbsp lime juice
❏ 5 cups of water
❏ 1.5 tbsp avocado oil (or other vegetable oil of choice)
❏ salt, to taste
Instructions
1. Begin to boil the 5 cups of water in a small or medium pot.
2. Chop all veggies as described above and put to the side.
3. Add 1 tbsp oil to a pan and allow to heat up for 30 seconds. Then add the carrots and sauté on medium for 2 minutes.
4. Next, add the green peas and saute for 1 minute.
5. Mix in broccoli, cabbage, and bok choy and sauté for 5 minutes.
6. After the water has come to a boil, add 1/2 tbsp oil, brown rice noodles, and a dash of salt, and cook on medium heat for 2-4 minutes. Once the noodles are soft, you know they're done! Drain out the water and set aside.
7. Add the cashews, soy sauce, teriyaki sauce, and maple syrup to the veggie pan and sauté for another 5 minutes.
8. Finally, add the rice noodles and lime juice to the veggies and mix together.
9. Serve and enjoy!

Instrucciones
1. Empiece a hervir las 5 tazas de agua en una olla pequeña o mediana.
